Chef Chan Chi Man Edmond curates the FLAVORS OF ONE HARBOUR ROAD culinary pop-up at China House, Grand Hyatt Mumbai

Each province encompasses numerous regional variations, each influenced by the unique characteristics of its districts. From the seafood-rich dishes of coastal areas to the rustic, hearty flavors of the countryside, these fine nuances create a vibrant tapestry of tastes.

WHAT’S HOT IN MUMBAI ventured to savor another celebrated representation of Hong Kong's cultural identity, blending tradition with a touch of exotic flair. Grand Hyatt Mumbai Hotel and Residences is excited to host an exclusive culinary pop-up at its renowned China House Restaurant, featuring Chef Chan Chi Man Edmond from Grand Hyatt Hong Kong. This pop-up will take place from December 19 to 25, 2024.

This exclusively designed menu comprises of One Harbour Road at Grand Hyatt Hong Kong’s signature dishes. Robert Dallimore, General Manager, Grand Hyatt Mumbai Hotel & Residences and Area Vice President, Hyatt West India said, “Chef Edmond’s meticulous attention to detail and a menu that represents traditional Cantonese flavors has earned him recognition as a transformative figure in the industry. His culinary prowess has elevated Cantonese food, while celebrated the depth of classical Chinese flavors and honoring traditional techniques."

As usual, we opted for something unique, exotic which evoked our sensory palate with their zing element. Our first dish was the steamed dumpling mixed vegetables - The steamed vegetable dumplings were delightful! We loved the thin honeycomb layer which is surely a visual treat. The dumpling encased a flavorful mix of fresh, finely chopped vegetables, offering a light yet satisfying bite. Surely a juicy treat to start your meal with.

The Fish and assorted vegetable soup is a comforting and flavorful delight. The broth is rich and creamy, perfectly complementing the tender fish and the fresh, well-cooked vegetables. A harmonious balance of taste and texture.

The baked pineapple bun was a sweet, buttery delight! Its golden, crumbly topping added a delightful crunch, while the soft, fluffy interior offered a subtle sweetness. Although the pineapple flavors were subdued, the sweetness is in sync with the spicy tangy filling. A perfect treat for those craving a classic and satisfying pastry.

The Cantonese poached grouper fillet was exquisite! The fish was tender and delicately poached, allowing its natural flavors to shine. Enhanced by a light, savory broth (wish there was more of it), it offered a subtle yet sophisticated taste. A true example of Cantonese culinary elegance.

The wok-fried chicken fillet with dry chili was a burst of bold flavors! Juicy chicken pieces were expertly cooked with a fiery blend of dry chili and aromatic spices, creating a deliciously spicy and savory dish.
